Bacchus
[BAK-uhs]
1. A white-wine grape that is a very successful cross of Müller-Thurgau and a sylvaner-riesling hybrid. Bacchus generally produces wines with good body, character, and aroma but low acidity. The best ones show muscatlike attributes. Most Bacchus wines are blended with Müller-Thurgau and go into lower-quality Liebfraumilch. 2. The Roman god of wine in classical mythology, Bacchus is often confused with Dionysus, the Greek god of wine before the age of Rome.

Baco Blanc
[BAH-koh BLAHN (BLAHNGK)]
White French-American hybrid that is grown mainly in France’s Armagnac district, where it replaced folle blanche, which had grafting and black rot problems. Baco Blanc was developed by French hybridizer Maurice Baco who crossed the American hybrid Noah with Folle Blanche. Baco Blanc is very prolific and produces the high-acidity, low-alcohol wines much sought after by Armagnac’s brandy makers. It’s also known as Baco 22A and Piquepoul de Pays.
Baco Noir
[BAH-koh NWAHR]
A French-American hybrid developed by French hybridizer Maurice Baco by crossing folle blanche with a native American vine. Baco Noir is grown in the eastern United States, primarily in New York State. It produces red wines that range from light, fruity styles that are reminiscent of beaujolais’ Gamay to slightly heavier versions that are more suggestive of light bordeaux-style wines. Much of the modest Baco Noir acreage finds its way into blends.
Baco, Maurice
[BAH-koh]
A late eighteenth-century French hybridist who developed a number of hybrids that are still in use today including Baco Blanc and Baco Noir.
