Cabardès AC
[kah-bahr-DAY]
This new AC was upgraded from VDQS status in 1998 and is beginning to gain attention. It’s located in France’s Languedoc-Roussillon region north of the city of Carcassonne and just west of the Minervois AC. red and rosè wines are made from a combination of Bordeaux and Rhône grape varieties including Cabernet Sauvignon, Cabernet Franc, Cinsaut, Cot (Malbec), Fer, Grenache, and Syrah.
Cabernet Blanc
[KA-behr-nay BLAHN (BLAHNGK)]
One of the names used for a blush wine (white wine made from red grapes) produced from Cabernet Sauvignon grapes. Such wines are also known as Blanc de Cabernet Sauvignon and Cabernet Blush. See also saignée.

Cabernet d’Anjou AC
[KA-behr-nay dahn-ZHOO]
An appellation for rosé wine located in the Anjou region in the central part of France’s Loire Valley. These almost dry, raspberry-flavored wines are based on Cabernet Franc grapes (with some Cabernet Sauvignon) and regarded with more respect than the sweet Rosé d’Anjou AC wines that are also produced in this region.
Cabernet Franc
[KA-behr-nay FRAHN (FRAHNGK)]
A red wine grape that’s similar in structure and flavor to Cabernet Sauvignon, but not quite as full-bodied (see body), and lower in tannins and acids. It is, however, more aromatic and herbaceous. Unlike Cabernet Sauvignon, Cabernet Franc grows in cooler climates and ripens early. Therefore, this grape can be particularly important when weather conditions produce a less-than-perfect Cabernet Sauvignon crop. Cabernet Sauvignon

If not the king of the top-quality red-wine grapes, as many argue, Cabernet Sauvignon is certainly the most successful and popular. It’s the primary grape of most of the top vineyards in France’s Médoc and Graves districts.
