Assyrtico; Assyrtiko [ah-SYR-tih-koh]
A high-quality white grape that’s not only the main variety grown on the Greek island Santorini but also increasingly grown throughout Greece. Assyrtico has citrus and honeysuckle traits and a trademark acidity that perseveres even as it fully ripens in the hot Greek climate. It’s often used as a blending wine with wines from grapes with low acidity.
