eucalyptus [yoo-kuh-LIHP-tuhs]
A spicy, aromatic, mintlike aroma found in certain red wines, such as Heitz Martha’s Vineyard Cabernet Sauvignon. Some vineyards that produce such wines are surrounded by eucalyptus trees, which some contend contribute their essence to the grapes.
