must weight
A measurement of the sugar content of unfermented grape must. Knowing the must weight helps winemakers forecast the finished wine’s potential alcohol. The must weight is usually measured by using either a refractometer or a hydrometer. The three scales used to quantify the must weight are Baumé, Brix, and Oechsle. See also specific gravity.
