oxidized

Describing deterioration through oxidation (exposure to air), either during production or aging. The chemical changes caused by oxidation produce a brownish color and stale, flat sherrylike smell and flavor, all of which can render a table wine undrinkable. Though oxidized is often used synonymously with maderized, the latter infers that, in addition to air exposure, the wine has also endured storage in an overly warm environment.
