Cathedral is the name of this rare and lovely Cabernet. Though not after a church but a special rock, this wine takes it's name and proves that it too is something to be revered. The bouquet spills over with black fruit, dark chocolate, eucalyptus, and a hint of anise. The flavor profile is a little different, but in a good way. This is a nicely balanced, light bodied wine with an array of flavors including tart blackberries and plums. The finish is dry with notes of black coffee that linger.
