Many modern Rieslings are being produced with slightly high residual sugar content. This style of blending enhances the body and viscosity of the wine, lending a more lush mouthfeel to complement the full Riesling fruit and acidity. However, in our Columbia Gorge appellation, we are able to locate micro-climates that resemble the traditional cool regions, with ripening times similar to where Riesling originates. We are able to ripen the grapes to an optimal sugar level and retain the grape's unique acidity and fruit quality. Our dry Riesling comes from the famed Bangsund vineyards in The Dalles, Oregon. Fermented dry, with a residual sugar less than 0.50%, the crisp fruitiness of the grape is completely expressed, and its gracefulness is uncovered by the drop in sugar content. Aromas and flavors reminiscent of peach, apricot and rose fill the glass. Our dry Riesling is polished and elegant with fish, shellfish and chilled meats such as ham or mortadella.
