Fermentation Notes
Cold soaked for three days to extract soft tannins and emphasize fruit characteristics. Quick, warm fermentation with multiple yeast strains to add complexity. The young wine was gently pressed at dryness. The wine matured in once and twice filled barrels until ready for blending and bottling.
