Winemaker’s Tasting Notes
Dark and saturated with color, this ripe, well sculpted Cabernet in the Bordeaux tradition is ample in aromas of black currants, a hint of violet and spicy oak which lead to smooth cassis-like flavors. This elegant wine will benefit from up to seven or eight years of additional cellaring.
Vintage Notes
2004 was a warm year which allowed us to hand harvest the late ripening Cabernet fruit from our Valley View Vineyard by mid October.
Fermentation Notes
With this vintage we returned to the practice of using small batch, open top fermenters and hand punching to mix the cap and the juice. Aging was carried out in French oak barrels, 20% of which were new.
