The toasted vanilla oak, blends with rich blackberry, currant, black cherry and thyme. This wine has a rich, deep nose, and a supple smooth finish. This wine lends itself for drinking alone or being paired with food.
Fermentation Notes
The fermentation process lasts an average of fifteen days, at which time the grapes are pressed, allowed to settle for two days, and then placed in oak barrels consisting of 60% French oak and 40% American oak. The Longevity 2004 Paso Robles Cabernet Sauvignon is aged for 18 months in the barrel, and another 18 months in the bottle.
Vintage Notes
Paso Robles is considered one of California’s most up and common wine regions. It’s wines are starting to score points to rival those of Napa. This Cabernet Sauvignon grapes are from the Owl Ridge vineyard.

My kind of tart...
This wine exhibits some of the characteristics which I love about fruit. Some like their cherries sweet and ripe. Interesting combo of cola and watermelon hanging out with some cherries in a dark alley... and that's just the SMELL!!! :) This cab had some great flavors!
