San Saba Vineyards Late Harvest Sauvignon Blanc
San Saba Vineyards
|
Liquid gold, this wine is a fantastic melody of lychee, apricot, nectarine, and peaches with some cantaloupe and honey. The more floral notes of orange blossom and honeysuckle complete the aroma. sweet but balanced with acidity, the wine moves through your mouth with flavor and viscosity, leaving it clean and awaiting another swallow.

Fermentation Notes
Sauvignon Blanc is one of the rare varieties capable of producing great wines in both warm and cool climates. We took this wine that extra step and allowed grapes to ripen to 38° Brix. Clusters were then frozen to further separate juice and water. Pressed while still slightly frozen, the water crystals remained inside the skins and only the sweet, sugary essence dripped down into the press pan. After fermentation, the wine was allowed to rest in neutral barrels for four months, giving flavors time to knit together.
Vintage Notes
One of the wettest winters was followed by a near perfect growing season. Temperatures were moderate throughout the entire spring and summer. A long, temperate fall with no rain allowed us to let clusters hang and develop to full ripeness. Harvest 2005 will be remembered for great yields and excellent quality. The two don’t often happen in the same year.
